Lubbock Business Update: Roni’s Mac Bar, Frontier Market, and Chicken

In this column, we will be catching up on August’s business news so far. Let’s dive into some of the exciting developments that have been happening in the business world.

We started the week with a cheese-tastic story on the upcoming Roni’s Mac Bar. Jennifer Ewing, franchisee for the Lubbock location, discovered Roni’s thanks to her teen daughters. She shared, “I would tell Lubbock that almost 2 million fans online can’t be all wrong. Build-your-own mac and cheese is a college kid’s comfort-food dream, and with over 77 million combinations to potentially make, it’s almost impossible to not have a good bowl or sandwich.” This customizable mac and cheese restaurant is set to open in Lubbock, near Texas Tech University, offering a unique dining experience for mac and cheese lovers.

In our series exploring West Texas agriculture, we revisited Plainview’s Frontier Market. Layton Schur, the owner, shared insights on the lessons learned, cool collaborations, and future plans for the market. He emphasized the importance of fresh produce in the region, noting that many people are in dire need of the quality that their grandmothers used to provide. The market continues to serve the community with its focus on locally sourced products and a commitment to supporting local farmers.

In terms of new openings in the area, Barefoot Lubbock and Big Chicken welcomed customers in early August. Chicken Salad Chick also joined the scene on August 13, offering a variety of delicious chicken salad options. However, there were also some closures to note, including the Free Range Fry House and a vape shop at the former Masiso location. Despite these closures, the Co-Op Public House and Co-Op Bakery and Bistro will continue to serve patrons in the area.

Looking ahead, there are no scheduled openings for next week yet, but with late August approaching and the start of the school year, we can expect more businesses to make their debut in the coming weeks.
